Judge’s comments: “Plump grains with a lovely, springy bite that burst with flavour. Nutty and slightly earthy, this is a grain that would work beautifully in salads or as a side dish. There is a freshness to them too, which is a revelation as sometimes farro can taste dusty and this does not. Delicious.”
Only being found on in northern and central Italy, specifically in the foothills of the Alps and the Apennines, our Fontana Formiello Farro/ Emmer is famous for their nutty, slightly sweet flavour and a chewy texture which stays tender and distinct when cooked. Our farro is unique because we use a gentle hulling method that keeps the germ and bran intact, unlike the more common pearled farro. This processed approach results in a longer cook time, but it’s a worthwhile trade-off for the farro’s nutritional value. While pearled farro sacrifices nutrients for faster cooking and a softer texture by removing the outer hull along with the beneficial germ and bran layers, our farro retains all its goodness. This translates to a farro packed with fiber, protein, and essential vitamins and minerals.
