Judges’s commented: “An authentic, well textured and versatile product. We enjoyed the size of the individual pieces and its flavour had clarity, without a hint of the ‘dustiness’ you sometimes encounter in this type of product. We liked it and would be happy to use it in our own kitchens.”
Recognized for its nutty flavor and distinctive golden hue, the pasta is made from high-quality durum wheat semolina and water, shaped through bronze dies, slow-dried, and lightly toasted. Originally hailing from North Africa as Arabic couscous, fregula was introduced to Sardinia by explorers and became a beloved part of the local cuisine.
These tiny round shapes are beautiful in meat-based soups and seafood dishes with clams and shrimps.
